One of the things I found when our family had to switch to low salt was to switch to sea salt or a non iodized salt. Morton's makes a free flowing sea salt as well as the iodine free salt. The salt brings out the taste better. I cut the amount by a third. So if a recipe calls for a teaspoon I use 1/3 of a teaspoon. The only thing this does not work with is baking and salting the water for pasta.
You will also have to learn to read labels. Lots of things are loaded with salt. We switched to mainly fresh and frozen vegetables as the canned ones were too loaded with salt.
Also start experimenting with herbs and spices to enhance the flavoring. A pinch of Tarragon in scramble eggs is great.
