[ world famous recipes ] Cod Veracruz 

Cod Veracruz

Fresh flavors of the Mexican seacoast are featured in this easy dish
flavored with spicy salsa, lime juice, cilantro and garlic.

Prep/Cook Time: 25 minutes
Yield: 4 Servings

Ingredients:
1 lb. fresh OR thawed frozen cod OR haddock fillets
1 can (10 3/4 oz.) Tomato Soup
1 can (10 1/2 oz.) Chicken Broth
1/3 cup Pace® Chunky Salsa OR Picante Sauce
1 tbsp. lime juice
2 tsp. chopped fresh cilantro leaves
1 tsp. dried oregano leaves, crushed
1/4 tsp. garlic powder OR fresh garlic, minced
4 cups hot cooked rice

Directions:
Place fish in 2-qt. shallow baking dish. Mix soup, broth, salsa, lime juice,
cilantro, oregano and garlic powder. Pour over fish. Bake at 400°F. for 20
min. or until fish is done. Serve over rice
Note: Substitute boneless chicken breast or thighs for cod. To fast thaw
frozen cod. Place (tightly wrapped) in cool water for 20 min.
