Spicy Sausage and Vegetable Frittata

8 ounces hot italian sausages -- casings removed
1 medium zucchini -- diced, 1 1/2 cups
1 large red or green bell pepper -- diced
6 large eggs
1 cup shredded mozzarella cheese

Crumble sausage into a 10 inch nonstick skillet. Cook over medium heat
2-3 minutes until no pink remains.

Add zucchini and bell pepper. Cook about 5 minutes, stirring often, until
vegetables are tender.

Whisk eggs in a large bowl. Stir in cheese. Pour over mixture in skillet
and stir gently to distribute eggs evenly.

Cook 4-6 minutes until set on bottom and sides (eggs will be runny in
center).

If skillet handle is plastic or wood, wrap in foil to prevent scorching.
Broil frittata 4-6 inches from heat source, 3 minutes or until firm in
center.
